So we were at a red light and since I can no longer drive past a food truck without checking it out, thanks to @copperbadge, I made F go around the block so I confirm that was what that said… and yup. I don’t know who thought
Vlad the Impaler would make people Hungary, but I giggled. 

Ahahahaha, I see what you did there. Hungary for Transylvanian food! 

It would be even funnier if the truck’s cuisine was garlic-themed.

OH MY GOD WHAT IF IT WAS A KEBAB TRUCK

It’s not QUITE that on the nose, but according to the truck’s website (They’re based out of Christchurch, New Zealand) they sell
kürtős kalács

- which they translate as chimney cake. It’s a sort of spit cake that’s a thing in Eastern Europe - wrap some dough around a pole and bake while constantly turning. You get a cylinder of pastry.

oh my god I had about a million of these when I was in Budapest and they are HEAVEN. You can get them covered in cinnamon sugar, or toffee, or nuts, or chocolate, and just…it’s like a spiral doughnut that’s a little cripy on the outside and soft in the middle and seriously. Best street food. I really want more places to sell it.

Healthy, Homemade, Chicken Hot Pockets

As a teacher and full-time graduate student, I feel as if I am always eating on the go and/or am too tired to cook once I get home… And this translates to less-than-stellar food choices which in turn makes me feel tired. It’s a vicious cycle.

This break, I’ve been cooking and freezing up a storm in hopes of having healthier alternatives that suit my on-the-go lifestyle.

I made up this super-yummy (easy-to-freeze and store) recipe, and thought all y’all teachers and students on my feed might be interested.

Healthy, Homemade, Chicken Hot Pockets

(I used MyFitnessPal app to get the exact nutritional break-down per serving)

Serves: 8

Calories per serving: 364

Fat per serving: 16.8g

Carbs per serving: 32.8g

Fiber per serving: 2.7g

Sugar per serving: 2.5g

Protein per serving: 21.8g

You will need:

1 package of ground chicken

1 package of fat-free cream cheese

1 cup fresh chopped kale

1 package (2 sheets) of puff pastry dough (in the freezer section)

4 chopped sweet peppers

2.5-3 stems of fresh rosemary

½ tsp of salt

½ tsp of pepper

To-Do:

Open puff pastry dough and allow to thaw

Pre-heat oven to 400 F

Assemble cream cheese, kale, and peppers into large mixing bowl

Brown chicken over medium heat

Rinse chicken (optional) and then pour into mixing bowl

Add rosemary, salt, and pepper

Mix gently with a spoon

Unroll thawed puff pastry dough

Cut each sheet into fourths (you should have 8 total squares)

Spoon about 2-3 Tblsp of chicken mix onto each puff pastry square

Pull the corners of the puff pastry together to seal the pocket

Place about 2 inches away from one another on a cookie sheet

Bake for 15 minutes or until golden brown

Allow to cool

Store in your method of choice (fridge or freezer)

Reblogging these delights of Amy’s from 2013 because I’m making them again this week, and I bet a lot of Educhums would enjoy this simple, healthy recipe.

I sub out ground chicken for cubed chicken because ground chicken weirds me out, but they really are delicious and easy. AND they freeze really well. The first time I made them I made like four different varieties and they lasted me at least two months.
